Bay leaves are among the most versatile of herbs, and the plants, if regularly clipped, rank among the most decorative of shrubs. The glossy and sweetly scented leaves are indispensable in both French and Mediterranean cooking, traditional ingredient in bouquet garni, and a "must" in marinades, court bouillon, stocks, and relishes.

History

The bay tree came originally from Asia Minor, and was established around the ancient cultures of the Mediterranean. A crown of laurel leaves presented as a symbol of wisdom and victory in ancient Greece and Rome, is the origin of the circlet of leaves worn by victorious motor racing drivers today. The French word baccalaureat, for examinations, and the term "bachelor," for academic degrees, both derive from the Latin for laurel berry, bacca laureus.

Characteristics

Bay leaves are flat, pointed, oval, about 3 inches long, dark green, and glossy. They retain a balsamic scent, and the wood, too, is strongly aromatic. The stems are tough and woody, and have a gray bark. The flowers, which appear in late spring, are small, yellow, and rather insignificant.

Growing Tips

Propagation is by heel cuttings, taken in early summer and kept under cover. Young trees are best planted out in spring; they like good, well-drained soil and a sunny, sheltered position. Harsh winters can kill them if they are left too exposed. For this reason, bay is often grown in pots or tubs.

The trees can be clipped into neat topiary shapes, the sphere being the most traditional.

Bay leaves are used in all branches of cooking - in soups, stocks, syrups, sweet and savory sauces, and as a garnish.

Medicinal Usage

Health-wise,the yellow-colored oil is responsible for its therapeutic actions. It has traditionally been used for the support of alopecia along with other problems such as flatulence, indigestion, and joint pain.

Bay Leaf is also known as Sweet Laurel, Wreath Laurel, Bay Laurel, and Yeuh-kuei. The bay tree is indigenous to Asia Minor, from where it spread to the Mediterranean. The Greek word for laurel is dhafni, named for the myth of the nymph Daphne, who was turned into a laurel tree by Gaea. Bay, or laurel, was famed in ancient Greece and Rome. Emperors, heroes, doctors and poets wore wreaths of laurel leaves. Triumphant athletes of ancient Greece were awarded laurel garlands for their exploits. Doctors wore crowns of Bay Leaf due to the Greek's belief that it provided support for everything from indigestion to nightmares. Bay leaves are still widely used throughout the world. It may be best known as a garnish or used similarly in soups, sauces, and stews, and is an appropriate seasoning for fish, meat and poultry. Bay leaf is often used as a pickling spice.

Grown successfully in Mediterranean climates, the Bay is a hardy evergreen shrub that grows wild or cultivated. In warm areas it can grow as high as 60 feet. Bay Leaf can be harvested at any time. Bay Leaf can be been used as an herbal supportive for headaches. It contains compounds called parthenolides, which have proven useful in supporting headaches. The essential oil has become popular in aromatherapy. It should be well diluted in suitable carrier oil and can be rubbed as a counter-irritant onto rheumatic or sprained limbs and bruised skin. The main use of laurel (both the leaves and the leaf oil) is in the food industry, as spice and as flavouring agent. The essential oil shows insecticidal effects.

Family: Bay laurel; sweet bay; true laurel; laurier d'Apollon (French); Lorbeer (German); alloro (Italian); laurel (Spanish).

Description: A large shrub or small tree (rarely up to 20 m) bearing simple, leathery leaves with somewhat wavy margins. Male and female flowers are usually borne on separate trees. Inconspicuous, yellowish white flowers occur in small clusters and develop, in the case of female trees, into black fruits resembling small olives. L. azorzca can also be used for health benefits.

Origin: Mediterranean region. The true laurel tree was important in Greek mythology and history, and is still a part of the modern vocabulary in such expressions as "a crown of laurel", "baccalaureus Scientiae" - bachelor of science, "poet laureate" or "resting on your laurels".

Parts Used: Leaves (Lauri folia) and the essential oil from the leaves (Lauri aetheroleum), rarely the fruit (Lauri fructus).

Therapeutic Category: Digestive tonic (amarum).

Active Ingredients: Essential oil in the leaves (up to 1% of dry weight) has 1,8-cineole, eugenol, linalool, costunolide and deacetyllaurenobiolide as main ingredients. In addition, leaves contain isoquinoline alkaloids (reticuline), aporphine alkaloids (boldine and others; similar to those in Peumus boldus), flavonoids, lignan glycosides and sesquiterpene lactones (costunolide).

Health Effects: Monoterpenes and sesquiterpene lactones are diuretic, spasmolytic; they are considered to be responsible for the digestive effects. Also the alkaloids and lignans are biologically active.

Status: Traditional health; Pharm.

Bay is known by many other common names: laurel, Grecian laurel, Indian bay, sweet bay. It is an evergreen bush or tree, found both wild and cultivated around the Mediterranean Sea. In ancient Greece, laurel leaves were used to make crowns for Olympic heroes and poets, and the tree was considered sacred to the god Apollo. Bay grows widely in the Pacific Northwest and in other warm-temperature and subtropical climates. It is not winter hardy; grow it as a pot plant in colder climates and take it indoors during the cold seasons. Bay tea can be used as an astringent, and it is said to aid digestion, support flatulence, and stimulate appetite. It is also believed to protect the user from witchcraft and to ease the pains of childbirth. Laurus nobilis and Magnolia glauca varieties both are said to have narcotic properties, so use them sparingly. Native laurels are poisonous and should not be used at all.

Plant Facts and Growing Tips

Plant: Tender, perennial tree with smooth-barked trunk and thick, shiny, dark evergreen leaves. Whit ish flowers are small and grow in clusters, but are seldom seen in the North. In milder areas, flowers appear in April and May and develop into black, egg-shaped berries.

Height: 3 to 6 feet when cultivated as a pot shrub. Bay may reach up to 30 feet when grown outdoors in a temperate climate.

Soil: Sandy, well drained.

Exposure: Full sun or partial shade. Protect from cold winds.

Propagation: By stem cuttings. Take 3- to 4-inch-long shoots of half-ripened stems and place them in a mix of sand and peat moss in a shady place outdoors. Shoots also may be layered. Allow six months or more for rooting. Suckers - shoots rising from a subterranean stem or root - develop a good root system more quickly.

Care: If using as a bush outdoors, set plants 4 feet apart and prune to desired height. As a pot plant, prune to promote bushiness, and bring indoors during colder weather. Bay grows very slowly, so bay trees are seldom inexpensive to purchase.

Taste: Pungent, almost bitter; can be sweetened with honey.

How to Brew

By Infusion: Use 1 teaspoon dried leaves (or 3 teaspoons fresh crushed leaves). Cover with 1 cup boiling water and steep to taste.

Digestibili-Tea

This tea is a spicy blend that aids in digestion:
  • 1 teaspoon dried bay leaves
  • 1 teaspoon dried mint leaves
  • 1 teaspoon ground ginger
Mix herbs. Infuse 1 teaspoon of mixture in 1 cup boiling water. Steep 5 to 8 minutes, or to taste.

Preparation and Dosage: A weak infusion is made of the fresh or dried leaves and can be taken with meals to improve digestion.
