In Medieval Europe, Mustard was one of the most common spices used to flavor the bland diet of the time. By the Fourteenth century, Dijon, France had been established as a Mustard center, supported by the Dukes of Burgundy. Today, Dsseldorf is one of the main mustard regions of Germany. At one time, surgeons disinfected their hands with a paste of mustard.

The primary chemical constituents of Mustard Seed include glucosinolates (sinigrin), sinapine, enzyme (myrosin), mucilage, protein, and sulphur. When taken internally, the seeds are laxative, mainly because of the mucilage they produce, but only small doses are advised as they may inflame the stomach. The stimulating, diaphoretic action can also be utilized for fevers and colds. But this well known herb has its primary health use as a stimulating external application. The rubefacient action causes a mild irritation to the skin, stimulating the circulation in that area, and supporting muscular and skeletal pain. An infusion or poultice of Mustard will aid in cases of coughs and pleurisy. Mustard is often taken as a tea, or ground and sprinkled into a bath.

There are many Mustards used interchangeably with Brassica nigra, commonly known as Black Mustard. These include: White Mustard (Sinapsis alba), Brown Mustard (Brassica juncea), Garlic Mustard (Alliaria petiolata and Alliaria officinalis), Pepper Grass (Lepidium sativum), White Top Mustard (Cardaria draba), Tansy Mustard (Descurainia species), and Hedge Mustard (Sisymbrium officinale).

Medicinal Usage

Mustard seeds were used to help stimulate circulation, support respiratory health concerns, and supportive stomach complaints. In large doses they acted as a powerful emetic. Added to baths they supported muscular and rheumatic aches, and alleviated cold and coughs and colds. Used as a poultice, or plaster, they reduced inflammations and eased pain. The seeds were chewed for toothache. Powdered, they could be used to help support headaches. "In short," wrote Culpeper, "whenever a strong stimulating health supplement is wanted to act upon the nerves, and not excite heat, there is none preferable to mustard seed." The hedge mustard was known as the "singer's mustard" because it was used to help support failing voices and improve vocal performance. Over use of mustard should be avoided; it may blister sensitive skins.

Culinary Usage

Young mustard leaves and flowers were added to salads. The ground seeds were mixed with water, vinegar, wine, or verjuice, and used to make a variety of culinary mustards, the strongest being English (a mixture of white and black). As a pungent sauce, mustard was served with a variety of dishes, especially salt meats and fish. In medieval monasteries, mustard seeds were also valued as a food preservative, especially in pickles and chutneys. To produce the traditional "mustard and cress" Sinapis alba was sown indoors in trays a few days after the slower-growing cress (Lepidium sativum).

Miscellaneous

A native of Mediterranean lands and much of Europe, mustard was cultivated by the ancient Greeks, Romans and Egyptians. Both black and white mustards were probably introduced into Britain by the Romans. The name derives from the Latin words mustum (unfermented grape juice) and ardens (burning or fiery), for the condiment was originally made by mixing the hot seeds with mustum. In medieval times one of the main centres of mustard production was in the Vale of Gloucester. Indeed, Shakespeare mentions "Tewkesbury mustard" in Henry IV Part II. Traditionally, the ground seeds were made into balls for sale in shops and market places. The plant, listed by Aelfric, was also grown for animal fodder, and as green manure.



Mustard flour can be used to help support two main purposes. It is first a rubefacient in the form of powder, mustard plaster or baths. It is secondly the basis of a well known preparation known as table mustard which can be an aperitive and digestive of value.

Clinical experience has confirmed what chemistry had postulated, i. e., for mustard to be effective, it must be diluted in warm water of 30-40°. Trousseau has proven by comparative experiments, that mustard plasters made with mustard flour and very strong vinegar were less rubefacient than those that had been prepared with sawdust and the same vinegar. This proved that vinegar and mustard mutually destroy each others effects. So warm water is what must always be used for mustard plasters and baths.

There are a great many cases in which mustard plasters or revulsive baths, partial or general, can be used to good effect. They are useful whenever it is a matter of producing a derivation, general stimulation, as in apoplexy, comatose affections, typhoid fever and some neuralgic complaints, sciatica and pulmonary emphysema. Any well prepared mustard plaster must act in 10 minutes and must not be applied more than 15 or 20 minutes.

White Mustard seed is used to good effect as a depurative, in a dose of one tablespoonful for constipation, dyspeptic troubles, apepsia, flatulence, in short, almost any case where there are serious digestive disorders.

Mustard seeds are considered effective in stimulating the circulation and digestive system. Mustard oil is traditionally applied to the skin as counter-irritant to help support rheumatic pain. Internal application of the oil against coughs, digestion and urinary tract health concerns is no longer recommended.

Other Names: Black mustard; moutarde noire (French); Schwarzer Serif (German) senapa vera (Italian): mostaza negra (Spanish).

Description: An erect leafy annual herb of up to 1 m in height with lobed leaves, yellow flowers and oblong, smooth seeds capsules. White mustard (Sinapis alba) is quite similar but has distinctive hairy fruit capsules. B. juncea (Indian mustard) is not a health herb.

Origin: Europe and Asia (black mustard); Europe (white mustard); southern and eastern Asia (Indian mustard). The plants are all grown as seed crops.

Parts Used: Ripe seeds (Sinapis nigrae semen) or seed oil (Sinapis aethiroleum), and sometimes as a liquid extract (Spiritus sinapis). Black mustard is the source of pungent mustard oil and is mentioned in the Bible.

Therapeutic Category: Disinfectant, counter-irritant.

Active Ingredients: Plants accumulate glucosinolates (mustard-oil glycosides) - sinigrin in black mustard and sinalbin in white mustard. Hydrolysis by the enzyme myrosinase (= thioglucosidase), gives volatile allylisothiocyanate (from sinigrin) and non-volatile p-hydroxybenzoyl isothiocyanate (from sinalbin).

Health Effects: The isothiocyanates of mustard oil can form covalent bonds with proteins and thus alter their properties. They have proven disinfectant effects against both gram-positive and gram-negative infectants. The oil acts as skin irritant to increase peripheral blood flow. It causes rapid reddening of the skin and sharp pain lasting up to 48 hours.

Notes: Several other plants of the order Capparales contain mustard oils (i.e. horseradish and nasturtium).

Preparation and Dosage: Used in the form of mustard spirits (Spiritus sinapis) or mustard plasters (made from crushed seeds soaked in lukewarm water). Diluted oils may be rubbed into the skin in case of stiff or painful muscles.



The mustard plant (Brassica nigra), native to Asia, has been invading man's grainfields wherever he has begun to cultivate. Mustard - Both Black (Brassica nigra) and White Mustard (B. alba) are grown for health and culinary uses of seeds, while White produces foliage much-prized as a salad and potherb.

Propagation: By seed, easy germination, self-sows freely.

Nature of Plant: Black Mustard grows to 4 feet with yellowish green, smooth leaves and racemes of small yellow flowers. White Mustard is a smaller plant than the black, not over 18 inches high; these plants self-sow too freely for introduction to the flower garden but are an addition to the culinary plot.

Spacing of Mature Plants: 12 inches.

Cultural Requirements: Poor, sandy soil in full sun.
